Wow, what a crazy month we have had here in New Zealand.
The delta variant of Coronavirus hit our shores and we went into a nationwide lockdown, which meant once again many cafes, restaurants and hospitality businesses had to close their doors until further notice.
Well, we have come out of the other side, more caffeinated than we went in and a little more educated on brewing at home. So in light of that fact, I bring you this blog post where I share my top 3 Aeropress recipes.
For these recipes, I will be using different doses of coffee and water. So pay attention to those and note down your favourite one.
Ready to jump in? Flick the kettle on, grind some of your favourite beans to a medium-fine grind, grab your Aeropress, a gooseneck kettle if you have one, a set of scales, a timer and let’s take the plunge.

The Drumming Barista’s Top 3 Aeropress Recipe’s
1. I like to call this the lazy Sunday morning Aeropress.
Now I contemplated starting with this recipe and also sharing it with you guys. I don’t use this recipe often but it is a fun one as it yields very surprising and delicious results. It is a no plunge recipe - purely using gravity to pull the water through the bed of coffee.
15g coffee - 250g water. Regular method. Make sure you rinse your paper filter. Put the cap on and pour your ground coffee into your Aeropress.
Place your Aeropress on top of your favourite mug.
0’00 - Pour all the water into your Aeropress. Give the water and coffee a stir for 10 seconds.
0’15 - step back and allow the water to drain through.
3 - 3’30 - TBT (total brew time).
Take your Aeropress off your cup. Give it a clean. Set it to the side. Grab your effortlessly brewed coffee and enjoy your lazy Sunday. You can thank me later for this one.
2. This one I am going to call - The Everyday User
Similar concept to the one above but with a plunge that introduces acidity and balance to the cup that is more pronounced and a touch cleaner.
11g coffee - 200g water. Regular method. Make sure you rinse your paper filter. Put the cap on and pour your ground coffee into your Aeropress. Pop the Aeropress onto your favourite mug or glass vessel.
0’00 - pour all of the 200g of water in. Stir 10 times. Place the plunger into the brew chamber and lift up slightly to create a vacuum in the chamber to stop the coffee from dripping through.
2’00 - begin to plunge down slowly for 1 minute and 15 seconds.
3’15 - TBT
Remove your Aeropress. Give it a clean. Set it to the side. Grab your cup of coffee or pour your brewed coffee into your favourite mug and enjoy.
3. The Drumming Barista
Yeah, you read that correctly. I am naming this recipe after myself because I love it so much.
This recipe is essentially creating a coffee concentrate which we dilute to taste at the end with a bypass of water. The result in the cup will be a coffee that is rich and decadent in flavour - bold, punchy and completely delicious. I personally recommend this coffee more so when brewing with a light-medium roasted natural process single-origin.

Great questions let me use this example from Royal Coffee to answer your question.
Bypass technique involves adding water directly into the brew, literally bypassing the filter. Rather than running hot water through the grounds, water is added to the liquor itself, diluting it. This can prevent over extraction, limit brew time, and prevent brew bed overflow on automatic brewers.

Ready to jump in? Make sure you pay attention as there is a couple of important steps to follow!
20g coffee - 150g water. Inverted method. Make sure you rinse your paper filter. Put the plunger into the brew chamber and pour your ground coffee into your Aeropress. Pop the Aeropress onto your scales.
0’00 - pour 100g of water over the ground coffee.
0’15 - stir 20 times - vigoursly.
0’30 - press the Aeropress down so the coffee comes to the edge of the chamber. Place the cap on and leave it to sit for one minute.
1’30 - flip the Aeropress over onto your favourite mug or vessel and press down fast for 30 seconds.
2’00 - Remove the Aeropress and add the 50g of water directly into your brewed coffee.
2’20 - TBT
Give your Aeropress a clean. Set it to the side. Grab your cup of coffee or pour your brewed coffee into your favourite mug and enjoy.
